Sonja and Alex of A Couple Cooks use spelt flower to whip up their vegan take on chocolate pancakes. "Spelt flour is a whole grain flour that has a sweet, nutty flavor versus the bitterness of whole wheat flour," explains Sonja. "Spelt flour keeps the texture of your baked goods fluffy and soft and won't weight them down." Sonja wanted these pancakes to be something special, so she settled on a chocolate flavor. "They're lightly sweet, made with maple syrup and cocoa powder," she says. "The resulting pancakes were so chewy and fudgy that we settled on the name 'chocolate brownie,'" though she promises they're not nearly as sweet "since who wants a sugar bomb for breakfast?" To top off your pancakes, she suggests adding a drizzle of maple syrup to add a final twinge of sweetness.
Quick and Easy Blender Protein PancakesHello Glow
Stephanie of Hello Glow wasn't a fan of protein powder, especially in recipes where it didn't deliver on flavor and gave a chalky texture. But she did want to up the protein intake with her breakfast. "So instead, I like to use a combination of ingredients that are naturally high in protein and fantastic," she says for her protein-packed pancake recipe. All-natural ingredients with pronounceable names that just so happen to be high in protein and create fantastic pancakes." To serve, Stephanie suggests upping the protein boost by "slathering each pancake with a little nut butter and topping them with sliced banana, berries, and another little sprinkle of hemp hearts."
