Frozen Brunch PunchCourtesy of Half Baked Harvest
This refreshing frozen rum punch fromВ Half Baked Harvest is made in large batches, leaving more time for brunching. It's fresh, fruity, and filled with delicious pineapple. "Fill a pitcher with Campari, rum, orange juice, and lime juice," says blogger Tieghan Gerard. "From here, you can either chill the mix until ready to serve or blend it up into a frozen bliss. When you're ready to blend, you'll add lots of pineapple, tons of ice, and a pinch of ginger. Then, blend and done."
Skinny PiГ±a Colada With Coconut WaterCourtesy of Hello Glow
This refreshing cocktail byВ Hello Glow is the ultimate classic tropical cocktail, minus all the sugar and calories. This three-ingredient piГ±a colada can be shakenВ or blended with ice. The best part: It's one-fourth the calories of the traditional version. "Not only is coconut water delicious, it's low in calories, cholesterol free, aids in digestion, and is extra hydrating thanks to all the minerals it contains," explains Stephanie Gerber of Hello Glow. "It also happens to be a helpful hangover remedy."
Blackberry Lilac MojitoCourtesy of Half Baked Harvest
Who doesn't love a good mojito on a hot summer day?В Though the classic recipe is good on its own, this blackberry mojito fromВ Half Baked HarvestВ gives it a refreshing twist by adding blackberries and fresh lilac, which Gerard turns into a syrup.В This ingredient isn't necessary to the recipe, but she says it adds a special touch. "If you don't have access to fresh lilacs, you can swap in dried lavender or just sweeten your drink with a spoonful of sugar or a drizzle of honey," she adds.
Cantaloupe DaiquirisCourtesy of How Sweet Eats
Daiquiris can get a bad rep, but it's largely misconstrued. This simple cocktail is much more sophisticated than the large frozen cups foundВ on Carribean cruises. The proof: This elegant cantaloupe daiquiriВ cocktail fromВ Jessica Merchant ofВ How Sweet Eats. The classic recipe combines rum, lime juice, simple syrup, and ice. That's it. But in this version, Merchant adds fresh cantaloupe juice, maraschino cherry juice, and a splash of seltzer. "To make the cantaloupe juice, blend 2 cups cubed cantaloupe melon in a blender until pureed and smooth," she explains. "Strain the mixture through a mesh strainer that is sitting on a bowl, pushing any extra liquid out with a spoon."
Tropical Strawberry Hibiscus Rum SmashCourtesy of Half Baked Harvest
This refreshing-looking rum smash byВ Half Baked HarvestВ may look tricky to make, butВ it's actually quite simple. "The bottom layer is a mix of mint, lime, mango juice, coconut water, and rum," explains Gerard. "Then, that top red layer-that's the hibiscus tea." Though she explains how to make the hibiscus tea from fresh blooms, aВ store-bought tea would work equally well and make the process much simpler.
Grapefruit MojitosCourtesy of Melanie Makes
For a refreshing twist on a classic mojito, try adding grapefruit, like in this version fromВ Melanie Makes. "Fresh mint and limes are muddled together before being drowned in grapefruit juice, simple syrup, white rum and club soda," explains the recipe.В Melanie Bauer also recommends making simple syrup in large batches to keep in the fridge, making the whole cocktail-making process a whole lot easier: "Simple syrup is simply a combination of equal amounts of sugar and water heated in a saucepan over medium heat until the sugar has dissolved completely.В After it cools, you can store the liquid in the fridge so it's at the ready whenever you'd like to use it."
Persimmon Spiced Rum Old FashionedCourtesy of Hello Glow
With persimmon season fast approaching, it's only natural we'd want to includeВ the yummy fruit in our libations. This cocktail recipe byВ Hello GlowВ takes a traditional old-fashioned and upgrades it with purГ©ed persimmon. Why purГ©ed? It makes the whole process simpler: "For this Spiced Rum Old Fashioned, I decided to use the purГ©e because muddling it in a glass is a bit messy and requires a shaker with a strainer," explains Gerber. "The purГ©e is easier and what's more, you can keep it in the freezer in single serving portions-an ice cube tray works great for that."В
Minty Grapefruit CaipirinhaCourtesy of Half Baked Harvest
Classic caipirinhas are great, but this one fromВ Half Baked HarvestВ is even better. In this recipe, Gerard took Brazil's national cocktail and substituted the teaspoon of sugar for tangy grapefruit. "As a substitute to sugar, I found that using freshly squeezed grapefruit juice added just the right amount of sweetness," she explains. "That said, if you prefer a sweeter drink, feel free to add a teaspoon or two of white sugar or possibly honey."
